Rump: Arguably one of the most versatile cuts for your freezer.

Rump is often overlooked in favour of sirloin or fillet, which I personally think it madness. If you ask most butchers, rump is one of the most flavourful cuts on the animal.


The difference is simply that the rump isn't about softness, its about all about flavour... and when it's cooked and slices properly, it's very hard to beat.


Where rump comes from

The clue is very much in the name here. Rump comes from the animal's hindquarters. As this muscle does more work than the loin, it is leaner and slightly firmer that a sirloin, but is full of rich, beefy flavour.

That extra muscle use give the rump it's flavour, but also means that it needs to be cooked the right way.


Why people get rump wrong

Rump gets a bad name because people treat is like a sirloin. Rump can be tough if cooked incorrectly, sliced the wrong way or not rested properly.

It's not the fault of the cut, it just needs a slightly different approach.


How to cook a rump

  1. Bring it to room temperature

  2. Season well

  3. Get your pan/grill really hot

  4. Cook quickly (2-3 minutes on either side for medium rare depending on thickness and don't keep moving it, let it form a crust)

  5. Rest it properly (leave it 5 minutes before cutting)


Slicing a rump steak

Always slice rump steak against the grain. This shortens the muscle fibres and makes it much more tender.

If you're only going to change one thing, make sure it's this!

One of it's biggest advantages is that rump is incredibly versatile. Alongside mince, it's the cut we use the most.


You can grill it like a traditional steak; cook it whole and it holds its own as part of a proper steak night.


Or slice it and use is in stir fries, fajitas, tacos, stroganoff, steak salads, baguettes, the list could go on.
